This scalloped zucchini recipe was a little bit of an experiment, but it turned out even better than I had hoped!This stuff is really pretty great and I may even like it better than the classic scalloped potatoes!.

So far this year, we’ve covered:.
Marinated and Grilled Zucchini.Slice your zucchini into rounds, about 1/4″ thick.
I like to try to slice them on the diagonal so it creates more surface area for those beautiful grill marks on each piece!.Place your zucchini slices in a large flat dish, something like a 9×13″ glass baking dish and then pour the marinade over everything.
Turn your zucchini slices over a few times to ensure even coating of each piece.. Let them marinate in the fridge for at least 4 hours, covered in plastic wrap.You can let them sit all day though if you want to do them early in the morning..
